  • 8 ounces spaghetti or your preferred pasta

  • 1 pint cherry tomatoes, halved
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried oregano or Italian seasoning

  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh basil leaves, chopped (optional)

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain and set aside.
  2. Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in the zucchini slices and cook for 4–5 minutes, until they are tender but still slightly crisp.
  3. Add the tomatoes: Add the cherry tomatoes to the skillet along with the red pepper flakes and oregano. Season with salt and pepper. Cook for another 4–5 minutes, stirring occasionally, until the tomatoes soften and release their juices.
  4. Combine with pasta: Add the cooked pasta to the skillet, tossing to coat in the sauce. If needed, add a splash of the reserved pasta cooking water to loosen the sauce.
  5. Finish the dish: Stir in the Parmesan cheese until melted and combined. Taste and adjust seasoning as needed. Remove from heat and sprinkle with fresh basil, if desired.
