Turkey Enchiladas

Ingredients:

  • 2 cups cooked turkey, shredded
  • 1 cup shredded cheddar cheese

  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup enchilada sauce
  • 8 small flour or corn tortillas
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh cilantro (optional)
  • 2 tablespoons sliced black olives (optional)
  • 1/4 cup sliced green onions (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
    • In a large bowl, combine the shredded turkey, half of the cheddar cheese, half of the Monterey Jack cheese, chopped onion, minced garlic, ground cumin, chili powder, salt, and pepper. Mix well.
  3. Assemble the Enchiladas:
    • Warm the tortillas in the microwave for about 20 seconds to make them more pliable.
    • Spoon a generous amount of the turkey filling onto each tortilla. Roll them up tightly and place them seam-side down in a greased baking dish.
  4. Add the Sauce and Cheese:
    • Pour the enchilada sauce evenly over the rolled tortillas.
    • Sprinkle the remaining cheddar cheese and Monterey Jack cheese on top.
  5. Bake the Enchiladas:
    • Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove the enchiladas from the oven and let them cool slightly.
    • Drizzle with sour cream and garnish with chopped fresh cilantro, sliced black olives, and sliced green onions, if desired.
