Ingredients:
- For the Teriyaki Salmon:
- 4 salmon fillets
- 1/4 cup soy sauce
- 1/4 cup mirin
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Sesame seeds and chopped green onions for garnish
- For the Stir-Fried Veggies:
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 zucchini, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper, to taste
Instructions:
- Prepare the Teriyaki Sauce:
- In a small bowl, whisk together the soy sauce, mirin, honey or brown sugar, rice vinegar, minced garlic, and grated ginger.
- Marinate the Salmon:
- Place the salmon fillets in a shallow dish and pour half of the teriyaki sauce over them. Let marinate for at least 15-30 minutes.
- Cook the Salmon:
- Heat the vegetable oil in a large skillet over medium-high heat.
- Remove the salmon from the marinade (discard the used marinade) and sear the salmon fillets for about 3-4 minutes on each side, or until cooked through and caramelized. Remove from the skillet and set aside.
- In the same skillet, add the reserved half of the teriyaki sauce and cook for 2-3 minutes until slightly thickened.
- Return the salmon to the skillet, spooning the sauce over the fillets to glaze them. Remove from heat.
- Stir-Fry the Vegetables:
- In a separate large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the bell peppers, snap peas, zucchini, and broccoli florets. Stir-fry for 5-6 minutes until the vegetables are tender-crisp.
- Drizzle with soy sauce and sesame oil, tossing to coat. Season with salt and pepper to taste.
- Serve:
- Plate the teriyaki salmon fillets and spoon the stir-fried veggies alongside.
- Garnish the salmon with sesame seeds and chopped green onions.
- Serve hot, with steamed rice or noodles if desired.
