  • Salt and pepper, to taste
  • 1 can (10 ounces) green enchilada sauce
  • 8 small flour or corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 cup sliced green onions (optional)
  • 1/4 cup sour cream, for serving

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Shrimp:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic, ground cumin, chili powder, paprika, salt, and pepper, and cook for another minute, until fragrant.
    • Add the shrimp and cook until pink and cooked through, about 3-4 minutes. Remove from heat.
  3. Assemble the Enchiladas:
    • Spread a thin layer of green enchilada sauce on the bottom of a 9×13-inch baking dish.
    • Warm the tortillas in the microwave for about 20 seconds to make them more pliable.
    • Spoon a generous amount of the shrimp mixture onto each tortilla, then sprinkle with a mix of Monterey Jack and cheddar cheese.
    • Roll up each tortilla tightly and place them seam-side down in the prepared baking dish.
  4. Add the Sauce and Cheese:
    • Pour the remaining green enchilada sauce evenly over the rolled tortillas.
    • Sprinkle the remaining Monterey Jack and cheddar cheese on top.
  5. Bake the Enchiladas:
    • Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove the enchiladas from the oven and let them cool slightly.
    • Garnish with chopped fresh cilantro and sliced green onions, if desired.
    • Serve with a dollop of sour cream on the side.
