Easy to prepare and irresistibly delicious, roasted onions are sure to become a staple in your culinary repertoire.

Ingredients:

  • 4 large onions (yellow, red, or a mix)
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 teaspoon fresh rosemary, chopped (optional)
  • 2 tablespoons balsamic vinegar (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Onions:
    • Peel the onions and cut them into wedges, leaving the root end intact to help hold the wedges together.
    • Place the onion wedges in a large bowl.
  3. Season the Onions:
    • Drizzle the olive oil over the onions.
    • Sprinkle with salt, pepper, fresh thyme, and rosemary (if using).
    • Toss the onions to coat them evenly with the oil and seasonings.
  4. Roast the Onions:
    • Spread the onion wedges in a single layer on a baking sheet.
    • Roast in the preheated oven for 25-30 minutes, or until the onions are tender and caramelized, stirring halfway through to ensure even cooking.
  5. Add Balsamic Vinegar (Optional):
    • If desired, drizzle the roasted onions with balsamic vinegar during the last 5 minutes of roasting. Return to the oven and continue roasting until the vinegar has reduced and coated the onions.
  6. Serve:

    • Serve immediately as a delicious and versatile side dish.
