Potato Sandwich

Ingredients:

  • 2 medium potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped (optional)
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt, to taste
  • 1/4 cup chopped fresh cilantro
  • 8 slices of bread
  • Butter, for spreading

Instructions:

  1. Cook the Potatoes:
    • Place the diced potatoes in a pot of salted water and bring to a boil.
    • Cook until the potatoes are tender, about 10-12 minutes. Drain and set aside.
  2. Prepare the Filling:
    • In a large skillet, heat the vegetable oil over medium heat.
    • Add the mustard seeds and let them splutter.
    • Add the chopped onion and green chili (if using) and sauté until the onion is translucent.
    • Stir in the turmeric powder, cumin powder, garam masala, and salt. Cook for another minute.
    • Add the cooked potatoes to the skillet and mash them slightly with a fork or potato masher.
    • Cook for 5 minutes, stirring occasionally, until the potatoes are well-coated with the spices.
    • Stir in the chopped cilantro and remove from heat.
  3. Assemble the Sandwiches:
    • Spread a generous amount of the potato filling onto four slices of bread.
    • Top with the remaining slices of bread to form sandwiches.
    • Spread butter on the outside of each sandwich.
  4. Toast the Sandwiches:
    • Heat a skillet or griddle over medium heat.
    • Place the sandwiches on the skillet and cook until golden brown and crispy on both sides, about 3-4 minutes per side.
  5. Serve:
    • Cut the sandwiches in half and serve immediately, optionally with ketchup or chutney.
