Ingredients

  • 3-4 pound pork loin roast
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey or brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together the olive oil, soy sauce, apple cider vinegar, honey or brown sugar, minced garlic, Dijon mustard, chopped rosemary, chopped thyme, smoked paprika, ground black pepper, salt, and red pepper flakes (if using).
  2. Marinate the pork: Place the pork roast in a large resealable plastic bag or a shallow dish. Pour the marinade over the roast, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.
  3. Preheat the oven: Preheat your oven to 350°F (175°C). Remove the pork roast from the marinade, letting any excess drip off. Reserve the marinade for basting.
  4. Sear the pork: In a large oven-safe skillet or roasting pan, heat a bit of oil over medium-high heat. Sear the pork roast on all sides until it is browned, about 2-3 minutes per side.
  5. Roast the pork: Transfer the skillet or roasting pan to the preheated oven. Roast the pork, basting occasionally with the reserved marinade, for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C). If needed, cover the roast loosely with aluminum foil during the last 30 minutes to prevent over-browning.
  6. Rest the roast: Remove the pork roast from the oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute throughout the meat.
  7. Serve: Slice the marinated pork roast and arrange it on a serving platter. Garnish with additional fresh herbs if desired.

Enjoy your Marinated Pork Roast as a delicious and impressive main dish that brings rich, savory flavors to your table, perfect for any special meal or celebration.
