Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 slices of Swiss cheese

  • 2 tablespoons butter

Instructions:

  1. Prepare the Chicken:
    • Preheat your oven to 350°F (175°C).
    • Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet, pound the chicken to an even thickness, about 1/4 inch.
  2. Assemble the Chicken Cordon Bleu:
    • Remove the top layer of plastic wrap. Season both sides of the chicken breasts with salt and pepper.
    • Place a slice of ham and a slice of Swiss cheese on each chicken breast.
    • Roll up each chicken breast tightly, starting from one end. Secure the rolls with toothpicks.
  3. Bread the Chicken:
    • Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
    • Dredge each chicken roll in flour, shaking off any excess.
    • Dip the floured chicken rolls in the beaten eggs, then coat them with breadcrumbs, pressing gently to adhere.
  4. Cook the Chicken:
    • Heat the olive oil and butter in an oven-safe skillet over medium-high heat.
    • Once hot, add the chicken rolls, seam side down. Cook until golden brown on all sides, about 2-3 minutes per side.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.

    • Remove the toothpicks before serving.
