Chicken and Broccoli Stir-Fry

Ingredients:

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 3 cups broccoli florets
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth or water
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 3 green onions, sliced
  • Sesame seeds for garnish (optional)
  • Steamed rice or noodles, for serving

Instructions:

  1. Prepare the Chicken:
    • In a small bowl, mix 1 tablespoon of soy sauce and 1 tablespoon of cornstarch.
    • Add the sliced chicken and toss to coat. Let it marinate for at least 15 minutes.
  2. Prepare the Sauce:
    • In a separate small bowl, whisk together the remaining soy sauce, oyster sauce, hoisin sauce, chicken broth or water, rice vinegar, sesame oil, and red pepper flakes (if using). Set aside.
  3. Cook the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the marinated chicken and stir-fry until cooked through and browned, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  4. Cook the Vegetables:
    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    • Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.
    • Add the broccoli florets and stir-fry for about 4-5 minutes until they are tender-crisp.
  5. Combine and Cook:
    • Return the cooked chicken to the skillet with the broccoli.
    • Pour the prepared sauce over the chicken and vegetables.
    • Toss everything together and cook for another 2-3 minutes until heated through and well-coated with the sauce.
  6. Serve:
    • Transfer the stir-fry to a serving dish.
    • Garnish with sliced green onions and sesame seeds if desired.
    • Serve hot over steamed rice or noodles.
