Apple Raisin Muffins

Ingredients:

  • 1 ½ cups all-purpose flour

  • ¼ teaspoon ground nutmeg
  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed

  • ½ cup unsweetened applesauce
  • â…“ cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • ½ cup milk (dairy or non-dairy)
  • 1 cup peeled, diced apple (about 1 medium apple)
  • ½ cup raisins

Instructions:

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour (if using), baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. Combine Wet Ingredients: In a medium bowl, whisk together the granulated sugar, brown sugar, egg, applesauce, oil, vanilla extract, and milk until smooth.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  5. Add Apple and Raisins: Fold in the diced apple and raisins until evenly distributed.
