Apple Pie

Ingredients:

  • Pie Crust:
    • 2 1/2 cups all-purpose flour

  • Apple Filling:
    • 6 cups thinly sliced and peeled apples (a mix of Granny Smith and Honeycrisp works well)
    • 3/4 cup granulated sugar
    • 1/4 cup brown sugar
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground allspice
    • 1 tablespoon lemon juice
    • 2 tablespoons all-purpose flour
    • 1 tablespoon butter, cut into small pieces
  • Egg Wash:
    • 1 egg, beaten
    • 1 tablespoon milk

Instructions:

  1. Prepare the Pie Crust:
    • In a large bowl, mix the flour, salt, and sugar.
    • Add the chilled butter pieces and use a pastry cutter or your hands to blend until the mixture resembles coarse crumbs.
    • Gradually add ice water, a tablespoon at a time, until the dough begins to come together.
    • Divide the dough into two equal parts, shape each into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Prepare the Apple Filling:
    • In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, allspice, lemon juice, and flour. Toss to coat the apples evenly.
  3. Assemble the Pie:
    • Preheat the oven to 425°F (220°C).
    • On a lightly floured surface, roll out one disc of dough to fit a 9-inch pie dish, leaving some overhang.
    • Transfer the rolled dough to the pie dish and gently press it into place.
    • Pour the apple filling into the crust, spreading it out evenly. Dot the filling with the small pieces of butter.
    • Roll out the second disc of dough and place it over the filling. Trim any excess dough, leaving about 1 inch of overhang.
    • Fold the top crust under the bottom crust edge and crimp to seal.
    • Cut a few small slits in the top crust to allow steam to escape.
  4. Bake the Pie:
    • In a small bowl, mix the beaten egg and milk to make the egg wash. Brush the top crust with the egg wash.
    • Bake the pie in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
    • If the edges of the crust start to brown too quickly, cover them with foil.
  5. Cool and Serve:
    • Allow the pie to cool on a wire rack for at least 2 hours before serving to let the filling set.
    • Serve warm or at room temperature, with a scoop of vanilla ice cream if desired.
