Turkey Bean Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 4 cups chicken or turkey broth
  • 2 cups cooked turkey, shredded
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 cups fresh spinach, roughly chopped (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the Vegetables:
    • In a large pot or Dutch oven, heat the olive oil over medium heat.
    • Add the chopped onion, diced carrots, and diced celery. Sauté until the vegetables are softened, about 5 minutes.
    • Add the minced garlic and cook for another minute, until fragrant.
  2. Add the Broth and Tomatoes:
    • Stir in the diced tomatoes with their juices and the chicken or turkey broth.
    • Add the dried thyme, dried oregano, and bay leaf.
    • Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes to allow the flavors to meld.
  3. Add the Turkey and Beans:
    • Stir in the shredded turkey and the drained and rinsed white and black beans.
    • Season with salt and pepper to taste.
    • Continue to simmer the soup for another 15-20 minutes, until the turkey is heated through and the flavors are well combined.
  4. Add the Spinach (Optional):
    • If using, stir in the roughly chopped fresh spinach and let it wilt in the hot soup for a couple of minutes.
  5. Serve:
    • Remove the bay leaf from the soup.
    • Ladle the soup into bowls and garnish with chopped fresh parsley, if desired.
    • Serve hot with crusty bread.
