Buttermilk Roast Chicken

  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon smoked paprika

  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions:

  1. Prepare the Marinade:
    • In a large bowl, combine the buttermilk, olive oil, garlic, rosemary, thyme, smoked paprika, black pepper, salt, lemon zest, and lemon juice. Mix well.
  2. Marinate the Chicken:
    • Place the chicken in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is completely coated. Seal the bag (or cover the dish) and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). If using a spatchcocked chicken, place it breast-side up on a baking sheet lined with parchment paper or in a roasting pan.
  4. Roast the Chicken:
    • Remove the chicken from the marinade, letting the excess drip off. Place it on the prepared baking sheet or pan. Roast in the oven for 45–55 minutes, basting occasionally with the juices in the pan, until the skin is golden brown and the internal temperature reads 165°F (74°C) at the thickest part of the meat.
  5. Rest and Serve:
