Vanilla Slice

Ingredients

  • 4 large egg yolks

  • 2-3 tbsp milk or water
  • 1/2 tsp vanilla extract (optional)

Instructions

  1. Prepare the Pastry:
    • Preheat the oven to 375°F (190°C).
    • Place the puff pastry sheets on a lined baking tray. Use a fork to prick holes evenly across the pastry to prevent puffing.
    • Bake for 15-20 minutes or until golden and crisp. Let cool completely.
  2. Make the Custard:
    • In a medium saucepan, combine the sugar and cornstarch. Gradually whisk in the milk until smooth.
    • Heat the mixture over medium heat, stirring constantly until it begins to thicken and bubble.
    • In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the yolks to temper them.
    • Return the yolk mixture to the saucepan and continue cooking, stirring constantly, until thickened.
    • Remove from heat and stir in the vanilla extract and butter until smooth. Allow the custard to cool slightly.
  3. Assemble the Vanilla Slice:
    • Place one sheet of baked pastry on the bottom of a square or rectangular baking dish.
    • Pour the cooled custard over the pastry and spread it evenly.
    • Top with the second pastry sheet, pressing gently to ensure it adheres to the custard.
  4. Prepare the Glaze:
    • Mix the powdered sugar with milk or water until smooth. Add vanilla extract if desired.
    • Spread the glaze over the top layer of pastry.
  5. Chill and Serve:
    • Refrigerate the assembled Vanilla Slice for at least 3-4 hours, or until the custard is fully set.
    • Slice into squares with a sharp knife and serve.
