GLUTEN FREE YORKSHIRE PUDDINGS

Yorkshire Puddings are a classic British side dish, traditionally served alongside roasts, particularly at Sunday dinners. These fluffy, golden puffs are crispy on the outside and soft on the inside, making them the perfect accompaniment to rich gravies and meats. This gluten-free version allows those with dietary restrictions to enjoy the same delicious texture and taste, without compromising on flavor. Made with a simple batter and baked to perfection, these gluten-free Yorkshire Puddings will be a hit at any meal, especially during the holidays or special occasions.

Ingredients:

  • 1 cup gluten-free all-purpose flour (make sure it contains xanthan gum)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup whole milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons vegetable oil (or beef dripping)
  • Fresh herbs (optional, for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Place a 12-cup muffin tin in the oven while it preheats so it becomes hot.
  2. Prepare the Batter: In a large bowl, whisk together the gluten-free flour, salt, and baking powder. In a separate bowl, beat the eggs and then whisk in the milk and melted butter. Gradually add the wet ingredients into the dry ingredients, whisking until smooth. Let the batter rest for 20-30 minutes if you have the time (this helps it rise better).
  3. Add Oil to the Tin: Once the oven and muffin tin are hot, carefully remove the tin from the oven and add 1 teaspoon of vegetable oil into each muffin cup. Swirl the oil around to coat the bottom of the cups.
  4. Fill the Muffin Tin: Pour the prepared batter into the muffin tin, filling each cup about halfway. The batter should sizzle when it hits the hot oil, which helps the Yorkshire puddings rise.
  5. Bake: Return the tin to the oven and bake for 20-25 minutes, or until the puddings have puffed up and turned golden brown. Do not open the oven door during the first 20 minutes of baking, as this can cause them to deflate.
  6. Serve: Once baked, remove the Yorkshire puddings from the oven and serve immediately. They are best enjoyed fresh, but can be reheated in a hot oven for a few minutes if necessary.

Optional: Garnish with a sprinkle of fresh herbs, such as thyme or rosemary, for added flavor.

These Gluten-Free Yorkshire Puddings are perfect for pairing with roasts, gravies, or soups, and will make a delightful addition to your next family meal!
