SALMON RISSOLES

Salmon Rissoles are a delicious and easy-to-make dish that combines tender flaked salmon with a crunchy exterior. These savory, golden-brown patties are packed with flavor from a blend of fresh herbs, breadcrumbs, and a hint of lemon. Ingredients:

  • 2 cans (6 oz each) pink or red salmon, drained and flaked (or 2 fillets of cooked salmon, about 1 lb)
  • 1/2 cup breadcrumbs (plus extra for coating)
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup green onions, finely chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/4 cup olive oil (for frying)

Instructions:

  1. Prepare the Salmon: If using fresh cooked salmon, flake it into small pieces with a fork. If using canned salmon, drain the liquid and remove any bones, then flake the salmon.
  2. Make the Mixture: In a large mixing bowl, combine the flaked salmon, breadcrumbs, parsley, green onions, Dijon mustard, lemon juice, egg, garlic powder, thyme, salt, and pepper. Mix everything together until well combined. If the mixture feels too wet, add a little more breadcrumbs to help bind the ingredients together.
  3. Shape the Rissoles: Using your hands, form the salmon mixture into small patties, about 2-3 inches in diameter. Coat each patty lightly with additional breadcrumbs on both sides for a crispy texture.
  4. Cook the Rissoles: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet, cooking in batches if necessary. Fry the rissoles for about 3-4 minutes on each side, or until they are golden brown and crispy on the outside.
  5. Drain and Serve: Once cooked, remove the rissoles from the skillet and place them on a plate lined with paper towels to drain any excess oil. Serve immediately with a side of tartar sauce, a squeeze of lemon, or a fresh salad.
